Simply whisk up eggs with your favorite mix-ins like cheese, veggies, or ham, pour it into a mug, and let the microwave do the work. I love breakfast! And while I would much rather sit down to a full spread, that’s not usually practical. Typically, mornings are rushed, a little chaotic, and the last thing I have time for is breakfast. Which is why I love to make omelet in a mug!

Why I Love Making an Omelet in a Mug

  • It’s quick and easy! Just 2 minutes in the microwave and you’re ready to go.
  • It’s portable! I usually take the mug with me to eat on the go.
  • Clear the fridge! It’s a great way to use up random food in the fridge because you can add anything to your omelet in a mug!
  • It’s healthy! I need a breakfast to fill me up and fuel me instead of weighing me down and a 2 egg omelet fits the bill perfectly.
  • Virtually no mess! You just need a mug and a fork to mix the eggs. That’s it!
  • I have a special omelet mug that I use, it’s so cute! I never have to worry about losing the recipe because it’s printed right on the mug! You can get one here. They come in 5 color options.

What you’ll need

  • eggs
  • milk or cream
  • cheese
  • salt and pepper
  • mix-ins- breakfast type meat, veggies, pesto, etc. Anything in your fridge!
  • non-stick spray

How to make an Omelet in a Mug

Wait until you see how easy this is!

  1. Spray the inside of a mug with oil or nonstick cooking spray.
  2. Add 2 eggs and a splash of milk or cream (about 1 tablespoon) and whisk them together.
  3. Add in your cheese of choice; it can be shredded, cubed, or torn from a slice of cheese. Add about 2 tablespoons of cheese.
  4. Add in your seasonings. I usually do salt and pepper, but add whatever you like!
  5. Add in about 1/4 cup of your desired mix ins. This could be anything, leftover bits of things are great to add in. I’ve used bacon, ham, leftover steak or hamburger, any veggies like spinach, sauteed onions or peppers, a spoonful of pesto or chimichurri, ricotta cheese; seriously anything goes!

Give everything a good mix, microwave 1 minute, mix again, microwave 1 more minute.

The eggs are fluffy and yummy! Careful though, it will be very hot. If I need to get out of the house, I like to throw this together and bring the mug with me so it has a chance to cool down.

Ingredients

Notes

If using veggies like mushrooms, onions, peppers, broccoli, or other hard vegetables it’s best that they are cooked first. Leftover sauteed or cooked veggies are perfect right from the refrigerator!
