Crock Pot Stuffed Pepper Soup is an easy, hearty dinner that tastes just like a stuffed pepperโ€”but in cozy, comforting soup form! Made with ground beef, bell peppers, tomatoes, rice, and Italian seasoning, this easy slow cooker soup is perfect for a busy weeknight.

Instead of stuffing individual peppers and baking them, everything gets cooked together in the crock pot. You get all those delicious stuffed pepper flavors in an easy, one-pot meal.

This is one of those recipes I love making on a Sunday because it makes a big batch and reheats beautifully for easy lunches throughout the week. It’s also freezer friendly, so you can save some for another day.

And because I love making dinner as easy as possible, this recipe uses simple ingredients you probably already have in your pantry. (AKA cheap!)

What Is Stuffed Pepper Soup?

Stuffed pepper soup is basically a deconstructed stuffed pepper in soup form.

Traditional stuffed peppers are filled with a mixture of meat, rice, tomatoes, and seasonings before being baked. For this soup, those same ingredients are simmered together in a flavorful tomato and beef broth.

You get all the flavor of stuffed peppers without having to stuff a single pepper! What could be better!?

It’s hearty enough to serve as a main course but still light enough for an easy lunch. One of my favorite things to do is make this on Sunday and portion it out for my lunches all week. Any it freezes so well!

Ingredients

Here’s what you’ll need to make Crock Pot Stuffed Pepper Soup:

  • Ground beef โ€“ I use lean ground beef, but ground turkey works too.
  • Yellow onion โ€“ Adds savory flavor to the soup.
  • Garlic โ€“ Fresh minced garlic gives the soup even more flavor.
  • Bell peppers โ€“ Use your favorite color or a combination. I love using colorful peppers!
  • Beef broth โ€“ Creates the flavorful soup base.
  • Tomato sauce โ€“ Adds a rich tomato flavor.
  • Diced tomatoes โ€“ Adds texture and even more tomato flavor.
  • Tomato paste โ€“ Helps make the broth rich and flavorful.
  • Italian seasoning โ€“ A simple way to add lots of flavor.
  • Salt and pepper โ€“ Adjust to taste.
  • Instant rice โ€“ Brown or white instant rice both work.

What kind of rice should I use?

The important thing here is to use instant or pre-cooked rice.

Instant rice cooks very quickly, which is why it’s added at the end of the cooking time.

If you use regular uncooked rice, it will require a different cooking time and may absorb too much of the liquid. If you really want to use regular long grain rice, cook it separately and stir in the cooked rice at the end.

How to Make Crock Pot Stuffed Pepper Soup

1. Brown the ground beef

Start by cooking the ground beef and diced onion in a large skillet over medium heat.

Cook until the beef is no longer pink and the onion is tender.

Drain any excess grease if necessary and season with salt and pepper.

Don’t skip this step! Browning the meat first adds great flavor to the soup.

2. Add everything to the crock pot

Transfer the cooked ground beef and onions to your crock pot.

Add the diced bell peppers, garlic, beef broth, tomato sauce, diced tomatoes, tomato paste, and Italian seasoning.

Give everything a good stir.

3. Let the crock pot do the work

Cover and cook on LOW for 6 hours or HIGH for 3 hours.

The peppers will become tender and all of those delicious flavors will come together.

4. Add the rice

When the soup is finished cooking, stir in the instant rice.

Cover again and cook for another 15โ€“20 minutes, or until the rice is tender.

5. Serve

Give the soup a good stir and ladle it into bowls.

Can I Use Ground Turkey Instead of Ground Beef?

Absolutely!

Ground turkey is a great substitute for the ground beef in this stuffed pepper soup. You can also use ground chicken if that’s what you have on hand.

The cooking instructions stay the same.


What Kind of Bell Peppers Should I Use?

Any color of bell pepper will work.

I typically use green, red, yellow, or orange peppersโ€”or a combination of colors.

Green peppers will give the soup a more traditional stuffed pepper flavor, while red, yellow, and orange peppers add a little more sweetness.


Can I Use Regular Rice Instead of Instant Rice?

I recommend sticking with instant or pre-cooked rice for this recipe.

Regular long-grain white or brown rice requires a longer cooking time and will absorb more of the broth.

If regular rice is all you have, I would cook it separately and stir it into the finished soup.


Can I Make Stuffed Pepper Soup Ahead of Time?

Yes! This is a great make-ahead meal.

Make the soup according to the recipe, allow it to cool, and store it in an airtight container in the refrigerator.

It will keep for up to 4 days.

You may need to add a splash of beef broth when reheating because the rice will continue to absorb some of the liquid as the soup sits.


Can I Freeze Stuffed Pepper Soup?

Yes! This soup freezes beautifully.

Allow the soup to cool completely before transferring it to freezer-safe containers.

Freeze for up to 6 months.

When you’re ready to eat it, thaw the soup in the refrigerator and reheat gently on the stovetop or in the microwave.

Tip: If you know you’re going to freeze the soup, you can also cook the rice separately and add it when serving. This helps prevent the rice from becoming too soft after freezing and reheating.


What to Serve with Stuffed Pepper Soup

This soup is hearty enough to be a complete meal, but I never say no to a little something on the side!

Try serving it with:

  • Crusty French bread
  • Garlic bread
  • Dinner rolls
  • Cornbread
  • A simple green salad
  • Grilled cheese sandwiches

And don’t forget the shredded cheese on top!


Can I Make This Stuffed Pepper Soup on the Stovetop?

Yes!

If you don’t want to use the slow cooker, brown the ground beef and onion in a large pot or Dutch oven. Add the remaining ingredients except the rice and simmer until the peppers are tender.

Stir in the instant rice during the last few minutes of cooking and cook until tender.

  • Add the ground beef and onion to a large skillet over medium heat. Cook until the beef is no longer pink and the onion is tender, drain if necessary. Season with salt and pepper to taste.
  • Pour the beef and onions into the crock pot. Add in the canned tomatoes, tomato sauce, beef broth, bell peppers, tomato paste, garlic and Italian seasoning.
  • Cover and cook on low 6 hours or high 3 hours.
  • Add in the rice, stir, recover and cook another 15-20 minutes until the rice is tender.
  • Serve with a sprinkle of shredded mozzarella cheese.

Notes

*Use brown or white rice, make sure it’s instant rice or pre-cooked.
*Sub ground chicken or turkey for the beef.
*This freezes well! Spoon the completely cooled soup into freezer safe containers, such as these Souper Cubes and seal. Freeze up to 6 months.
*Refrigerate leftovers up to 4 days.

  1. I don’t see peppers in the recipe, but do in the pics & recipe name. Is this meant to have peppers, or is it meant to be like the fulling in a stuffed pepper?

    1. Hi, I’m sorry, I’m not sure what you mean? If you scroll to the bottom of the post the recipe card is there with ingredients, measurements, and instructions. There’s 2 bell peppers in the recipe. Hope this helps.

    I like my bell peppers to still have a crunch to them, does this recipe create a tender or crunchy bell pepper? How can I manipulate the recipe to create a crunchier bell pepper?

  4. Hi Iโ€™m here with a question. Above the recipe card section, you put a note in there that if youโ€™re not using instant rice to cook it separately and mix it in, does that change how much liquid should be added to still get the desired flavor?
