  • 6 Quart + Slow Cooker
  • 2 cups beef broth
  • 2 (10.5 oz) cans cream of mushroom soup, I like the No Salt variety (only 1 pictured, but you’ll need two)
  • 1 packet Lipton Onion Mushroom Soup Mix
  • 1 tbsp olive oil
  • 6 boneless pork chops (1–2 inches thick)
  • Seasonings– salt, pepper, garlic powder, paprika
  • 16 oz mushrooms, sliced

How To Make It

Prep the slow cooker: Spray a 6-quart crock pot with nonstick cooking spray.

Make the sauce: Add beef broth, both cans of soup, and the onion mushroom soup mix to the crock pot. Whisk until combined.

Season the pork chops: Pat the pork chops dry. Sprinkle salt, pepper, garlic powder, and paprika evenly over both sides.

Sear the pork chops: Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 2 minutes per side until golden brown. Transfer them to the slow cooker. Push them into the sauce.

Cook the mushrooms: In the same skillet, add sliced mushrooms. Sauté for 3–4 minutes, just until they get some color. Pour them over the pork chops in the crock pot.

Slow cook: Cover and cook on low for 5 hours or high for 2 ½ hours, until the pork is fork-tender.

Serve and enjoy: Spoon the creamy mushroom gravy over the pork chops and serve with mashed potatoes, pasta, or rice.

Tips

  • Bone-in pork chops work too—just adjust the cook time slightly as they may take a bit longer.
  • Add veggies like broccoli or green beans in the last hour of cooking for an all-in-one meal. Add carrots at the beginning to allow them enough time to soften.
  • Make it extra creamy by stirring in ½ cup of sour cream right before serving.
  • Storage: Leftovers keep well in the fridge for up to 3 days and reheat beautifully.

FAQ’s

Do I have to sear the pork chops first?
Searing isn’t strictly required, but it adds great flavor and helps lock in the juices. If you’re short on time, you can skip it, but the extra step is worth it.

Can I use bone-in pork chops instead of boneless?
Yes! Bone-in pork chops work wonderfully in this recipe. Just add a little extra cooking time since they tend to take longer than boneless cuts.

Can I substitute chicken for the pork?
Absolutely. Boneless, skinless chicken breasts or thighs work as a substitute. Keep in mind chicken will cook a little faster, so check for doneness around the 4-hour mark on low.

Can I make this ahead of time?
Yes. You can prep the sauce and season/sear the pork chops the night before. Store everything in the fridge, then start the slow cooker the next day.

How do I thicken the gravy?
If you’d like a thicker gravy, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce during the last 30 minutes of cooking. Adding a spoonful of sour cream would also be delicious.

Summary

These Slow Cooker Mushroom Pork Chops are the ultimate comfort food—tender, flavorful, and smothered in a rich mushroom gravy. Whether it’s a busy weeknight or a cozy Sunday dinner, this recipe is one you’ll come back to again and again.
