Texas Caviar Recipe (Cowboy Caviar)
If you need an easy appetizer that disappears fast at parties, potlucks, cookouts, and summer gatherings, this Texas Caviar recipe is it! Also known as Cowboy Caviar, this colorful bean salad is packed with crunchy vegetables, hearty beans, sweet corn, and a tangy homemade dressing that gets even better as it sits.

The best part? It takes just minutes to throw together using canned ingredients and fresh veggies. Serve it cold with lime tortilla chips for the ultimate crowd-pleasing snack. The lime flavored are a must- that is what takes this crowd pleasing dip over the top!
Whether you’re making it for game day, a BBQ, or meal prep, this Texas Caviar is always a hit.

My mom gave me this recipe- so you know it’s a keeper! It’s a tried and true appetizer that’s been around for decades. According to my mom, you must serve cowboy caviar with the lime flavored tortilla chips- that’s what makes this version so good! And I’d have to agree! You can find the lime tortilla chips at any grocery store. I’d have to say that the Aldi brand is probably my favorite.
The dressing can be made with sugar or substituted with Swerve or Stevia. Both are good; but if I had to choose I prefer the sugar over the sugar substitute. Use whichever you prefer.
