Ingredients

  • 9×13 Baking Dish
  • 30 ounces frozen hashbrowns, slightly thawed so there aren’t large frozen clumps of potatoes
  • 10.5 ounces cream of chicken soup- cream of onion soup would be great, too!
  • 1 onion, diced small
  • 3 cups shredded Colby Jack cheese or cheddar cheese (reserve 1 cup for topping)
  • Salt + Pepper

How To Make Hashbrown Casserole

Preheat your oven to 375°F and grease a 9×13 baking dish.

In a large bowl, combine hashbrowns, cream of chicken soup, diced onions, 2 cups of cheese, salt, pepper, sour cream, and melted butter. Mix until everything is evenly coated.

Transfer the mixture to your prepared baking dish and spread it out evenly.

Sprinkle the remaining 1 cup of cheese on top.

Tips & Tricks

  • Extra Crispy Top: Sprinkle a tiny bit of paprika or panko breadcrumbs along with the cheese before broiling. Or try crushed Ritz crackers or Cornflakes cereal.
  • Add a Twist: Mix in diced bell peppers, green chiles, or cooked bacon for a fun flavor upgrade.
  • Serving Hack: Keep the foil on during transport if you’re bringing it to a potluck, then broil when you arrive for that fresh-out-of-the-oven look.

So this Easter, don’t let the sides take a backseat. Whip up these Copycat Cracker Barrel Hashbrowns, and watch them disappear faster than the chocolate bunnies!
