How To Make It
Start by adding the beef broth and carrots to the bottom of your crock pot. Season lightly with salt and pepper. If using potatoes, add them now. Be sure to dice them small so they cook completely.

In a small bowl, mix together the brown sugar, salt, pepper, mustard powder, and smoked paprika.
Pat the pork tenderloins dry with paper towels and rub the seasoning mixture all over the pork.

Heat the olive oil in a large skillet over medium-high heat. Add the sliced onions and sauté until they start to soften and get a little color, about 4–5 minutes. Transfer the onions to the crock pot.

Using the same skillet, sear the pork tenderloins for about 2 minutes per side until nicely browned. This step adds a lot of flavor.
Place the pork tenderloins in the crock pot on top of the carrots and onions.

Cook on LOW for 2½–3½ hours or HIGH for 1½–2 hours, until the pork reaches an internal temperature of 145°F.
Let the pork rest for at least 10 minutes before slicing.

How To Make The Gravy
Strain the cooking juices from the crock pot into a saucepan over medium-high heat. If there isn’t enough liquid, add 1/2- 1 cup chicken or beef broth to the pan.
In a small bowl, whisk together the cornstarch and water to make a slurry.
Slowly pour the slurry into the saucepan while whisking. Continue whisking until the sauce thickens into a rich gravy. Add more seasonings/salt and pepper, to taste.
Pour the gravy over the sliced pork and enjoy!

Tips for the Best Pork Tenderloin
- Don’t skip the sear. Browning the pork before slow cooking adds extra flavor.
- Use a meat thermometer. Pork tenderloin is best at 145°F so it stays juicy. I love a heat-safe thermometer to ensure the pork doesn’t overcook and get dry.
- Let it rest before slicing. This helps keep the juices inside the meat.
What to Serve with Crock Pot Pork Tenderloin
- Creamy mashed potatoes
- Cheesy Mashed Potatoes
- Low Carb Mashed Cauliflower
- Stuffing
- Roasted asparagus or broccoli
- Buttery dinner rolls
- Rice or egg noodles
- Simple side salad
- Mac and Cheese
FAQ’s
Can I skip searing the pork?
Yes, but searing adds extra flavor and color. If you have time, it’s worth the extra step.
Can I add potatoes to the crock pot?
Yes! Baby potatoes or chopped Yukon gold potatoes work great alongside the carrots.
Can I use pork loin instead of pork tenderloin?
You can, but pork loin is larger and will need longer cooking time.
How do I store leftovers?
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently with a little broth to keep the pork moist. Freezer: Up to 3 months
