If you are looking for an easy, last minute dessert recipe for a party or holiday (Valentine’s Day, maybe?) look no further than these super yummy Strawberry Brownies!
Although, they aren’t really brownies because they are made with strawberry cake mix, they have the chewy, moist texture you love in a brownie.
Five ingredients and 20 minutes. Let make them!

- 1 box strawberry cake mix
- 2 eggs
- 1/3 cup vegetable oil or melted unsalted butter
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice plus 1-2 tbsp milk or water

How to make Strawberry Brownies

Mix together the cake mix, eggs, and oil. The mixture will be thick. Pour it in to a9x9 greased baking dish.

Bake it. Bake the brownies for 18-22 minutes, until they are a light brown on top.
Prepare the glaze. Mix together the powdered sugar, lemon juice and 1-2 tablespoons of milk or water to make the glaze.
Let the brownies cool in the pan for 10 minutes.

Pour the glaze over the brownies and spread it evenly. Let the glaze set before cutting into squares.

Tips and Suggestions
- For a stronger strawberry flavor, add 1/2 teaspoon of strawberry extract to the glaze.
- Mix 1/2 cup of white chocolate chips into the batter for an extra sweet touch.
- Double the recipe for a 9×13-inch baking dish.
- Bake times may vary depending on your oven and the type of baking dish you use—metal, ceramic, or glass. I used a ceramic dish, and 20 minutes was the perfect bake time for me. Check the brownies at 18 minutes and adjust as needed. The top should be lightly browned, and a toothpick inserted in the center should come out clean.
- Tip: Use a plastic knife for cleaner cuts when slicing brownies.
- Store in an airtight container for up to 3 days.

Strawberry Brownies

- 1 box strawberry cake mix
- 2 eggs
- 1/3 cup vegetable oil or melted unsalted butter
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice plus 1-2 tbsp milk or water
Instructions
- Preheat the oven to 350°F.
- Lightly grease a 9×9-inch baking dish or line it with parchment paper.
- In a mixing bowl, combine the cake mix, eggs, and oil. The batter will be thick!
- Press the batter evenly into the prepared baking dish.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean and the top is lightly golden. Be careful not to overbake.
- Let the bars cool in the pan for 10 minutes.
- To make the glaze, whisk together the powdered sugar, lemon juice, and 1 to 2 tablespoons of milk or water until smooth and pourable.
- Drizzle the glaze over the bars. Once fully cooled, cut into squares and enjoy!
