The Best Buttered Noodles

These are THE BEST Buttered Noodles. Buttered Noodles are the ultimate comfort food. It’s the perfect dish when you’re feeling under the weather, when it’s cold outside, when you are home sick, or pretty much any time is the perfect time for cheesy buttery noodles.

When I’m feel a little sick or getting over a cold, all I want is a big bowl of warm and cheesy buttered noodles. There’s something so comforting about pasta. These noodles are easy, quick, kid approved, and surprisingly flavorful because the pasta is cooked in chicken broth.

No one in our house turns down buttered noodles! It’s the perfect last minute dinner to throw together at a moment’s notice.

This dish is almost too simple to be called a recipe….almost 😉

What you’ll need

  • A 3 quart or larger sauce pot to cook the noodles
  • Your favorite pasta– some of my favorites for this recipe are ditalini, egg noodles, or pastina.
  • Chicken broth- or vegetable broth, to cook the pasta in and add more flavor and nutrition.
  • Butter– of course! Salted or unsalted.
  • Parmesan cheese– optional, but definitely necessary 😉
  • Seasonings– depending on your taste, I use salt, pepper and garlic powder, nothing too powerful because I typically make this when I’m not feeling well so I don’t want too much seasoning. You can definitely add spices or hot sauce to your liking. Fresh parsley on top is a great addition.

How to make it

  1. Boil the broth in a 3 quart or larger sauce pot over high heat.
  2. Cook the pasta according to the package directions.
  3. Drain the noodles when finished cooking, leaving some broth in the noodles and return to the pot. Do not rinse the pasta.
  4. Add in the butter and stir to melt the butter into the pasta.
  5. Sprinkle in desired seasonings and top with parmesan cheese. Enjoy!

Tips and suggestions

  • Any pasta works for buttered noodles, but I prefer ditalini, pastina, or egg noodles.
  • Use a high quality butter. Because this dish contains minimal ingredients, the butter flavor really comes through.
  • Spice it up with siracha, hot sauce or red pepper flakes.
  • Use chicken or vegetable broth instead of water for enhanced flavor. If you use water, make sure to salt it generously, or add chicken bullion.

The Best Buttered Noodles

Equipment

Ingredients
  

  • 8 oz ditalini pasta or any pasta, half a regular box
  • 1/4 cup butter
  • Salt pepper, garlic powder to taste
  • 3-4 cups chicken broth enough to cover the pasta, add more if necessary while boiling
  • Grated Parmesan cheese lots!

Method

  3. Drain the noodles when finished cooking, leaving about 1/4-1/2 cup of broth in the noodles and return to the pot. Do not rinse the pasta.
  4. Add in the butter and stir to melt the butter into the pasta.
  5. Sprinkle in desired seasonings and top with parmesan cheese.

    Love buttered noodles. My comfort food. Used egg noodles. Perfect for a freezing rain day. Snuggled in with pasta and Netflix.

    When I was in the military, stationed in Belgium, I used to go to the mess hall and order plain spaghetti I would ask for would ask many packets of butter and parmesan cheese. The guys that cooked the spaghetti asked me what I put on it since I didn’t want sauce. They thought I used ketchup, lol. This was always a go to.

  3. Family loved it. I used eight cups of broth, since three cups seems like so little for 16oz of noodles (maybe I’m missing something?). Nice alternative to mac and cheese for my son who has issues with dairy. I added dill, and also added parmesan right into the pan, to thicken that bit of broth and coat the noodles. De-lish!!
