When life gets busy, having a few easy weeknight dinners you can count on makes all the difference. These Easy Sheet Pan Shrimp Fajitas are one of my family’s favorite meals because they’re packed with flavor, require just a handful of ingredients, and are ready in less than 30 minutes.

I LOVE fajitas! They are so easy to make, they are easy to customize; you can use fish, chicken, steak, shrimp or go vegetarian, it’s a one pan dinner, AND is so quick to put together and quick to cook.

Ingredients

This one-pan wonder combines juicy shrimp, colorful bell peppers, and onions tossed in a smoky, zesty seasoning blend. It’s a fresh, vibrant dinner idea that’s as simple as it is satisfying!
  • Sheet pan-You can use one very large sheet pan or 2 smaller sheet pans.
  • Shrimp – Large shrimp, peeled and deveined. I prefer tail off, but you could leave the tails on. large peeled and deveined shrimp, tail on or off. You can use frozen shrimp and thaw them or pick up some fresh shrimp at the seafood counter.
  • Large Onions – I’m using a big yellow onion, but red or white are great too.
  • Bell Peppers – I love colorful bell peppers if I can find them at a reasonable price, but use any color you have.
  • Fajita Seasoning Packet
  • Olive Oil 
  • Lime Wedges or lime juice
  • Tortillas – Flour, corn or lettuce wraps or serve over rice in a bowl.

Fajita Topping Ideas:

  • Cilantro
  • Lime wedges
  • Sour cream or crema- try mixing lime juice with sour cream, so yummy!
  • Sliced avocados or guacamole
  • Salsa or Pico de Gallo
  • Shredded cheese or cotija cheese
  • Shredded lettuce
  • Pickled jalapeños

Homemade Fajita Seasoning

Mix your own seasoning instead of using the fajita seasoning packet. In a small bowl whisk together these ingredients:

How to make it

Preheat oven to 425ºF

If making homemade fajita seasoning, stir all of the spices together in a small bowl.

In a large bowl, toss the sliced peppers and onions with 1 tablespoon olive oil and half of the fajita seasoning.

Spread into a single layer on a large sheet pan.

Roast for 15 minutes.

While the vegetables roast, toss the shrimp with the remaining tablespoon of olive oil and the remaining fajita seasoning until evenly coated.

Remove the sheet pan from the oven and add the seasoned shrimp in a single layer with the vegetables.

Return the pan to the oven and bake for 5 more minutes, or until the shrimp are pink, opaque, and cooked through.

Wrap the tortillas in foil and warm them in the oven during the last few minutes of cooking.

Squeeze fresh lime juice over everything before serving.

Fill warm tortillas with the shrimp and vegetables, then top with your favorites.

Tips for Perfect Shrimp Fajitas

  • Don’t overcook the shrimp. Shrimp cook very quickly and only need about 5 minutes in a hot oven.
  • Use large shrimp. They stay juicy and are less likely to overcook.
  • Slice vegetables evenly so they roast at the same rate.
  • Spread everything into one layer so the vegetables roast instead of steam.
  • Warm your tortillas before serving for the best texture.

Storage & Reheating

Store leftover shrimp and vegetables in an airtight container in the refrigerator for up to 3 days.

Reheat gently in a skillet over medium heat or in the microwave just until warmed through. Be careful not to overcook the shrimp during reheating.

I don’t recommend freezing this recipe since shrimp can become rubbery after thawing.

Ingredients
  

  • 1 pound large shrimp, thawed, peeled, deveined and an extra 1/2-1 pound of shrimp for more servings
  • 3 bell peppers large, sliced, any color
  • 1 red onion large, sliced
  • 1 ounce Fajita seasoning packet
  • 2 tbsp olive oil
  • lime juice for serving
