Cranberry Brie Puff Pastry Bites

Buttery puff pastry, creamy Brie cheese, tart cranberry sauce, and a sprinkle of toasted pecans and rosemary, finished with a drizzle of honey—each bite is pure holiday magic.

  • Mini Muffin Pan
  • Puff pastry, thawed. I like using the Jus-Roll Puff Pastry that I find at Walmart because it’s refrigerated and there’s no thawing required. It’s so easy to use.
  • Brie cheese, cut into small cubes (about ½-inch pieces)
  • Cranberry sauce (canned or homemade)
  • Toasted pecans, chopped
  • Fresh rosemary
  • Cooking spray or butter for greasing pan
  • Honey– for drizzling (I’m using salted homey and it is delicious on these bites! Hot honey would also be amazing.)

How To Make It

Preheat the oven:
Preheat your oven to 400°F (200°C). Lightly grease a 24-count mini muffin pan with cooking spray or butter.

Prepare the puff pastry:
On a lightly floured surface, unfold the thawed puff pastry sheet. Cut it into 24 equal squares (about 1.5-2 inches each, depending on the size of your puff pastry sheet).

Assemble the bites:
Gently press each puff pastry square into the mini muffin cups, creating little pastry shells.

Add the fillings:

  • Place a cube of Brie into each pastry cup.
  • Spoon about 1 teaspoon of cranberry sauce over the cheese.
  • Sprinkle with chopped toasted pecans and a tiny pinch of rosemary.

Bake:
Bake for 12–15 minutes, or until the pastry is puffed and golden brown and the Brie is melted.

Garnish and serve:
Let the bites cool for 5 minutes in the pan before removing. Garnish with a tiny sprig of rosemary and a drizzle of honey. Serve warm or room temperature.

Tips

  • Prep ahead: You can assemble the puff pastry bites a few hours in advance and refrigerate them. Pop them in the oven just before serving.
  • Reheat: Warm leftovers in a 350°F oven for about 5 minutes to re-crisp the pastry.

Can I use homemade cranberry sauce?
Absolutely! Homemade or canned both work great.

Can I use a regular muffin pan?
You can! Just cut the puff pastry into larger squares (about 3 inches) and increase the baking time by a few minutes.

What kind of Brie should I use?
Any Brie works—plain or double cream. You can leave the rind on (it’s edible!) or trim it off if you prefer a smoother melt. And melty cheese can work- Camembert, Gouda, fontina, or Gruyere would all be great.

Can I freeze them?
Yes! Bake and cool completely, then freeze in a single layer. Reheat in the oven at 375°F until warm and flaky again.

Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 4 oz Brie cheese cut into small cubes (about ½-inch pieces)
  • ½ cup whole berry cranberry sauce canned or homemade
  • ¼ cup toasted pecans finely chopped
  • 1 teaspoon fresh rosemary finely chopped (plus extra for garnish)
  • Honey for serving
  • Cooking spray or butter for greasing pan

Method
 

  1. Preheat your oven to 400°F (200°C) and lightly grease a 24-count mini muffin pan with cooking spray or butter.
