Homemade Hamburger Helper Beef Stroganoff

I grew up outside of Pittsburgh, Pennsylvania, a real meat and potatoes kind of town. We ate meals like this often as a kid; creamy, beefy, filling. And I still love them today. There’s something so comforting about a creamy pasta with beef.
My family also loves a hearty pasta dinner, so beef stroganoff is always a win in our house. This recipe is so quick and easy! It’s on the table in about 20 minutes. It’s just like you remember, but way better!

- Lean ground beef– this recipe works with 1/2 pound to 1 pound of ground beef, so if you only have a random half pound of ground beef in your fridge, you can still make this.
- Egg noodles– Egg noodles really are the optimal noodle here because it’s close to the original plus they cook quickly. You can use a different noodle, but keep in mind your cooking time may differ.
- Cream of mushroom soup
- Beef broth– if you don’t have beef broth you can use water.
- Milk, or heavy cream
- Worcestershire sauce
- Seasonings– Salt, pepper, onion powder, garlic powder
- Cornstarch– to thicken the sauce
- Sour Cream- optional * I’ve made this with the addition of sour cream and we found it to be too overpowering with both the sour cream and cream of mushroom soup, so I do not add sour cream. However, if you love it, feel free to stir it in at the end.

How to make It
Brown the Beef
In a large skillet or sauté pan over medium-high heat, cook the ground beef until no longer pink, breaking it up with a spoon as it cooks. Drain off any excess grease if needed.

Season and Thicken
Season the cooked beef with salt, pepper, garlic powder, and onion powder. Sprinkle the cornstarch over the beef and stir well to evenly coat. Continue stirring until the cornstarch is fully absorbed and no longer visible.
Remove the beef from the pan and set aside on a plate.
Cook the Noodles
In the same pan (don’t rinse it!), pour in the beef broth, milk, and Worcestershire sauce. Stir to combine and bring the mixture to a boil.
Once boiling, add the egg noodles, reduce the heat to low, cover, and simmer for about 8 minutes—until the noodles are tender and most of the liquid is absorbed.

Bring It All Together
Return the cooked beef to the pan and stir in the cream of mushroom soup. Mix well to create a rich, creamy sauce that coats every noodle. If you’re using sour cream, add it in now.
Let everything simmer for another 2–3 minutes to heat through and meld the flavors.

Serve & Enjoy!
Serve hot, garnished with chopped parsley if you like, and pair with a simple green salad or steamed veggies for a complete meal.

- Make it Creamier: Stir in ¼ cup of sour cream at the end for an extra-rich stroganoff flavor.

I absolutely love this recipe! I used to always make beef stroganoff in the slow cooker with stew meat and honestly I am not a big fan of stew meat and when I saw you making this I immediately had to try it and I used ground turkey and I loved it but then my kids wanted ground meat so I did it with ground beef and oh my goodness that was just as good. Now I crave it and actually so do my children. Thank you so much for this I LOVE IT ❤
