I grew up outside of Pittsburgh, Pennsylvania, a real meat and potatoes kind of town. We ate meals like this often as a kid; creamy, beefy, filling. And I still love them today. There’s something so comforting about a creamy pasta with beef.

My family also loves a hearty pasta dinner, so beef stroganoff is always a win in our house. This recipe is so quick and easy! It’s on the table in about 20 minutes. It’s just like you remember, but way better!

Ingredients

  • Lean ground beef– this recipe works with 1/2 pound to 1 pound of ground beef, so if you only have a random half pound of ground beef in your fridge, you can still make this.
  • Egg noodles– Egg noodles really are the optimal noodle here because it’s close to the original plus they cook quickly. You can use a different noodle, but keep in mind your cooking time may differ.
  • Cream of mushroom soup– any “cream of” soup will work if you need to substitute
  • Beef broth– if you don’t have beef broth you can use water.
  • Milk, or heavy cream
  • Worcestershire sauce
  • Seasonings– Salt, pepper, onion powder, garlic powder
  • Cornstarch– to thicken the sauce
  • Sour Cream- optional

How to make It

Brown the Beef
In a large skillet or sauté pan over medium-high heat, cook the ground beef until no longer pink, breaking it up with a spoon as it cooks. Drain off any excess grease if needed.

Season and Thicken
Season the cooked beef with salt, pepper, garlic powder, and onion powder. Sprinkle the cornstarch over the beef and stir well to evenly coat. Continue stirring until the cornstarch is fully absorbed and no longer visible.
Remove the beef from the pan and set aside on a plate.

Cook the Noodles
In the same pan (don’t rinse it!), pour in the beef broth, milk, and Worcestershire sauce. Stir to combine and bring the mixture to a boil.
Once boiling, add the egg noodles, reduce the heat to low, cover, and simmer for about 8 minutes—until the noodles are tender and most of the liquid is absorbed.

Bring It All Together
Return the cooked beef to the pan and stir in the cream of mushroom soup. Mix well to create a rich, creamy sauce that coats every noodle. If you’re using sour cream, add it in now.
Let everything simmer for another 2–3 minutes to heat through and meld the flavors.

Serve & Enjoy!
Serve hot, garnished with chopped parsley if you like, and pair with a simple green salad or steamed veggies for a complete meal.

FAQ’s

Can I make Homemade Hamburger Helper Beef Stroganoff ahead of time?

Yes! This recipe is perfect for meal prep. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave with a splash of milk or beef broth to make the sauce creamy again.

Can I freeze Beef Stroganoff?

I don’t recommend freezing this recipe. Because it contains dairy and egg noodles, the sauce can separate and the noodles may become soft after thawing. It’s best enjoyed fresh or refrigerated for a few days.

Can I use ground turkey instead of ground beef?

Absolutely! Ground turkey or ground chicken are both great substitutes if you’re looking for a lighter version. The Worcestershire sauce and cream of mushroom soup still provide plenty of rich, savory flavor.

What can I use instead of cream of mushroom soup?

If you don’t like mushrooms, you can substitute cream of chicken or cream of celery soup. The flavor will be slightly different but still delicious and creamy.

Do I have to use egg noodles?

Egg noodles give this dish its classic Beef Stroganoff texture, but rotini, bowtie, medium shells, or even penne can work. Just be sure to adjust the cooking time according to the pasta you choose.

Can I add vegetables?

Yes! Mushrooms, peas, diced onions, spinach, or frozen mixed vegetables are all delicious additions. Stir frozen vegetables in during the last few minutes of cooking so they stay tender-crisp.

Why did my sauce get too thick?

The egg noodles continue absorbing liquid as they sit. Simply stir in a splash of milk or beef broth while reheating until the sauce reaches your desired consistency.

Can I make this without sour cream?

Yes! In fact, this recipe is written without requiring sour cream. The cream of mushroom soup already makes the sauce rich and creamy. If you enjoy a tangier, more traditional stroganoff flavor, you can stir in ¼ cup of sour cream just before serving.

Can I double this recipe?

Yes! Simply double all of the ingredients and use a large Dutch oven or deep skillet. You may need to add a few extra minutes to the cooking time to ensure the noodles become tender.

This was pretty darn good and so simple to make. I wonder what it would taste like with cream of chicken soup. Will experiment next time. Definitely a keeper.

I absolutely love this recipe! I used to always make beef stroganoff in the slow cooker with stew meat and honestly I am not a big fan of stew meat and when I saw you making this I immediately had to try it and I used ground turkey and I loved it but then my kids wanted ground meat so I did it with ground beef and oh my goodness that was just as good. Now I crave it and actually so do my children. Thank you so much for this I LOVE IT ❤

I tried this recipe bc I was craving some good ole H.H. (I’m not sure if it’s just me and my family but the boxed stuff does not taste the same as it used to) and wanted to try making it myself and I’m so happy that I did. Now i will say and this is just my opinion but I don’t think it taste the same as the boxed HH but in a good way. This recipe is definitely more filling, creamier, you can actually pronounce the ingredients you’re putting in it and last but not least it’s absolutely delicious. My family used to moan and groan when I would say I was making HH for supper but now they actually ask for this recipe and did I mention it’s honestly no more difficult than using the other stuff. I know as for me and my family we won’t be going back this recipe is a winner and a keeper in my book. Thank you so much for sharing.

Very good recipe. I did add a little thyme, tarragon and parsley from my spice cabinet because anytime I combine mushrooms and beef I just love that herb combo, Sauteed half a shallot with the ground beef and I added a half cup of canned mushrooms with the soup. Delicious!
