Crock Pot Cinnamon Sugar Almonds
There’s something magical about warm cinnamon sugar nuts during the holidays—or honestly, any time you want your house to smell like a cozy winter market. These Crock Pot Cinnamon Sugar Almonds are crunchy, sweet, warmly spiced, and unbelievably easy thanks to the slow cooker.

One of my favorite Christmas traditions growing up was a visit to the mall over the holidays. (When malls were still hugely popular! Those were the days!) The oversized ornaments, the train ride through the mall, the giant decorated trees, pictures with Santa, the buzz of shoppers, it was all so magical! But one thing I remember the most were the smells- in particular the smell of the roasting cinnamon sugar almonds.
So hard to resist! I’m so happy to be able to recreate those wonderful roasted cinnamon sugar almonds so easily at home using a crock pot. Every time I make these it brings me back. And they make the perfect gift for friends, family or neighbors.

- Granulated sugar
- Light Brown Sugar
- Cinnamon
- Salt
- Egg white
- Vanilla Extract
- Roasted almonds (make sure they’re roasted and not raw for the best crunch)
- Water
How To Make It
Mix the Cinnamon Sugar
In a medium bowl, stir together the granulated sugar, brown sugar, cinnamon, and salt. Set aside.

Froth the Egg White
In another bowl, use an electric mixer to whisk the egg white and vanilla until frothy—about 3 minutes.

Coat the Almonds
Add the roasted almonds to the egg white mixture and toss until completely coated.
Pour in the cinnamon sugar mixture and mix until every almond is covered.

Slow Cook
Spray the inside of your slow cooker with non-stick spray. Add the almond mixture.
Cook on LOW for 2 1/2 hours, stirring every 30 minutes.
The Magic Step
During the last hour, pour in the 1/4 cup of water and stir well.
This helps the cinnamon sugar caramelize and gives the almonds that signature glossy crunch.

Cool and Store
Spread the almonds onto a parchment-lined baking sheet and separate them into a single layer.
Let cool for 30 minutes, then store in an airtight container for up to 1 1/2 weeks.

FAQ’s
Can I use raw almonds?
You can, but the texture won’t be as crunchy. Roasted almonds give the best results and hold up better to the moisture in the slow cooker.
Can I double the recipe?
Yes! Just be sure to stir well and make sure your crock pot isn’t overly full. Cooking time may increase slightly.
How long do cinnamon sugar almonds last?
Stored in an airtight container, they stay fresh for up to 1 1/2 weeks. For extra crunch, store them in a cool, dry spot.
Can I make these without egg whites?
The egg white helps the cinnamon sugar stick and gives the almonds their crunchy coating. A vegan alternative like aquafaba (whipped chickpea liquid) can work in a pinch.
Can I use a liner instead of spraying the crock pot?
It’s better to spray the insert directly. Liners can cause the sugar mixture to pool or not caramelize properly.
How do I prevent the almonds from sticking together?
Spread them on parchment while warm and separate with a spatula. They will harden into individual pieces as they cool.

Can you use pecans
absolutely!
Trader Joe’s has roasted salted almonds. Can I use those and omit the salt? Their nuts tend to be cheaper.
Absolutely! I got my roasted at Aldi for $5.95 per 1 pound bag, I bought 3 bags.
Absolutely delicious!
