I’m using leftover Crock Pot Easter Ham for this recipe.

  • 9×13 Baking Dish
  • 5–6 large croissants (I just grabbed some from our supermarket bakery)
  • Diced ham– I’m using leftover Easter Ham, deli sliced ham can also be used
  • Shredded white cheddar cheese– gruyere, gouda, cheddar, or Monterey jack would all be delicious substitutes
  • Large eggs
  • Milk– 2 % or whole works best. I have not tried this with plant based milk.
  • Heavy cream
  • Seasonings-salt, black pepper, garlic powder, Fresh parsley for garnish (optional)
  • Dijon mustard (optional but delicious)

How to Make Ham Croissant Breakfast Casserole

1. Prepare the baking dish

Preheat your oven to 350°F and lightly grease a 9×13 baking dish.

Tear the croissants into large chunks and spread them evenly in the dish.

2. Add the fillings

Sprinkle the diced ham evenly over the croissants.

Add 1 cup of the shredded cheese, reserving the remaining cheese for the top.

3. Make the egg mixture

In a large bowl, whisk together:

  • eggs
  • milk
  • heavy cream
  • salt
  • pepper
  • garlic powder
  • Dijon mustard

Whisk until smooth and fully combined.


4. Assemble the casserole

Pour the egg mixture evenly over the croissants and ham.

Gently press the croissants down with a spoon so they soak up the custard.

Sprinkle the remaining ½ cup of cheese over the top.

5. Chill (optional but recommended)

Cover the dish and refrigerate for at least 1 hour or overnight. This allows the croissants to absorb the egg mixture and results in a creamier casserole.


6. Bake

Bake uncovered for 35-40 minutes, or until the center is set and the top is golden brown.

Let the casserole rest for 10 minutes before serving.

Garnish with chopped parsley if desired.
